Cook + mix until consistency of wet sand
5 types - White, Blonde, Brown, Dark Brown, Black depending on recipe

Roux + Milk - add 1 cup at a time and stir
Can add half onion studded with cloves
Mornay
Bechamel + Cheese - mix under low heat
For- anything that uses cheese - ham and cheese toast
Soudish
Bechamel + sweat onions - blend
For - Lamb skewer + hot honey
Mustard
Bechamel + mustard + pepper + taragon
For - Chicken + oil
Aurora
Bechamel + tomato paste 20% + pasta
For - pasta and Rose sauce
Horseradish
Bechamel + black pepper + vinegar
For- steak + oil + salt
Parsley
Bachamel + lemon juice + parsley
For - fish & chips
